    Ingredients You'll Need

Labeled ingredients for the pork roast.
    • Pork Loin: A tender, juicy cut of meat perfect for slow cooking or roasting in the oven.
    • Olive Oil: Adds flavor and aids in even cooking of the pork loin.
    • Salt: Enhances taste and helps to bring out the natural flavors of the meat.
    • Ground White Pepper: Has a milder flavor than black pepper, rounding out seasonings without overpowering them.
    • Onion: Adds a slight sweetness and depth of flavor.
    • Granny Smith Apples: Their tartness contrasts nicely with the sweetness of the onion and brings balance to the dish.
    • White Wine: Adds a touch of acidity that adds complexity to the flavors of this dish.
    • Water: Helps keep moisture levels high for slow cooking.

    Step-By-Step Instructions

Steps to make the pork roast.

Step 1: Rub the roast with 1 tablespoon of oil, salt, and pepper. Heat the remaining tablespoon of olive oil in an uncovered pressure cooker over medium heat. Place the roast in the pan, fat-side facing down. Brown well on all sides, and finish on the side where you began. Add the onions, apples, wine, and water.

Step 2: Close and lock the lid. Pressure cook on high for 25-30 minutes.

Step 3: Allow the pot to sit for 30 minutes before carefully releasing any residual pressure.

Step 4: Move the roast to a serving dish tented with tin foil to rest.

Step 5: Using an immersion blender, blend the cooking liquid into an applesauce. Slice the roast and serve with applesauce.

    Expert Tips

    • Use a meat thermometer. The internal temperature of your roast should reach at least 145 ℉ before it is considered done.
    • Don’t overcrowd the pot. Make sure to leave enough room for the roast to cook properly and evenly.
    • Add other flavors. If desired, experiment with different herbs, spices and seasonings for more flavor.
    • Let the pressure release naturally. This will help retain all the moisture in your pork loin roast so it remains juicy!

    Variations

    • Traditional: Stick to the basics and create a classic roast with garlic, onions, and herbs.
    • Mediterranean: Add Mediterranean flavor by adding olives, capers, lemon juice, oregano, and thyme.
    • Asian-inspired: Create an Asian-inspired flavor by adding soy sauce, ginger, scallions, and sesame oil.
    • Mexican: Spice it up with Mexican flavors like cumin, chili powder, diced tomatoes, and jalapeno peppers.
    • Caribbean: Get a taste of the islands by using pineapple juice or mango salsa for a sweet yet savory twist!

    Storing & Freezing

Storing: Place pork in an airtight container and refrigerate for 3-4 days.

Freezing: Wrap cooled pork tightly, then place each portion into a freezer safe resealable bag. You can freeze cooked pork for up to 3 months.

    Recipe FAQ's

What internal temperature should the pork loin reach?

The pork loin roast should reach an internal temperature of 145 ℉ before it is considered done.

Can I use other cuts of meat for this recipe?

Yes, you can use any cut of pork that is suitable for roasting, such as pork shoulder or pork tenderloin.

Can I make this recipe in a slow cooker instead?

Yes, you can! Just follow the same instructions but adjust the cooking time according to your slow cooker's instructions. You will also need to add more liquid as the ingredients cook slower in a slow cooker than in an Instant Pot.

Why is my Instant Pot pork loin tough?

Toughness in pork loin can be caused by overcooking. To ensure the perfect texture and doneness, use a meat thermometer. For pork loin, the ideal temperature is 145 ℉. If your roast has been cooked above that temperature it could lead to tough or chewy meat. You should know that the pressure release process may take longer with thicker cuts of meat, so be sure to factor this into your cooking time.

How many minutes per pound of pork roast in the Instant Pot?

The time it takes to cook a pork roast in an Instant Pot varies greatly depending on the size and thickness of the roast. As a general guideline, it usually takes 15-20 minutes per pound at high pressure. For example, a 4 lb. pork loin can be cooked for 45-60 minutes at high pressure with 10 minutes of natural pressure release before serving.
