Ingredients You'll Need

- Pork Chops: Thick-cut, bone-in pork chops are best for this recipe. The fat from the bone helps keep the meat moist as it cooks, resulting in more flavorful, juicy pork chops. You can use boneless, of course, but you’ll need to reduce the cooking time. See the FAQs for tips.
- Salt & Ground Black Pepper: To flavor the meat.
- Water: This is your necessary pressure cooking liquid and the base of the honey mustard bbq sauce. You can make the sauce even more flavorful by using low-sodium chicken broth here.
- Traditional BBQ Sauce: Use your favorite thick, sweet, and tangy tomato-based sauce. This can be homemade or store-bought, in which case you can’t go wrong with Sweet Baby Ray’s.
- Honey Mustard Dipping Sauce: This sauce is a mixture of honey and mustard, as the name suggests, but it often has mayo as well to give it a creamy texture. This can be homemade (see FAQs) or a store-bought sauce. Again, Sweet Baby Ray’s makes a good one.
- Raw Honey: Adds the right amount of sweetness and helps thicken the sauce.
Step-By-Step Instructions

Step 1: Prep pork chops. Pat the pork chops dry with a paper towel and season generously on both sides with salt and pepper.
Step 2: Mix sauce ingredients. Add water, BBQ sauce, honey, and honey mustard dipping sauce to the Instant Pot, and whisk until combined. Then, nestle the pork chops in with the sauce.
Step 3: Pressure cook. Lock the lid in place, ensure the pressure valve is sealed, and then pressure cook on high pressure for 20 minutes.
Step 4: Release steam. When the timer stops, manually quick-release the steam. Once the valve drops, open the lid, remove the pork chops, and set them aside on a serving platter..
Step 5: Reduce sauce. Turn the Instant Pot to sauté mode, and bring the sauce to a simmer. Let simmer for about 5 minutes or until the liquid reduces by about half.
Step 6: Finish and serve. Spoon the sauce over the pork chops, and serve hot with your favorite sides.

Expert Tips
- Plan so you have enough time to place the pork chops on the counter 20-30 minutes before cooking them. Bringing the meat to room temperature helps it cook up evenly, soft, and tender.
- If you’re new to cooking with a pressure cooker, you may want to stand back and use a long handled kitchen tool to quick release the steam.
- To check for doneness, insert a food thermometer into the thickest part of the pork chop near the bone and make sure the internal temperature is at least 165 ℉.

Storing & Freezing
Storing: Place cooled leftover pork chops in an airtight container and keep them in the refrigerator for up to 3 days.
Freezing: Place the pork chops in a freezer-safe container or bag, remove as much air as possible before you seal it, and keep it in the freezer for 2 to 3 months.
Recipe FAQ's
Remember, it can take 5-15 minutes for the cooker to build pressure, sometimes longer, depending on how full the pot is and how much liquid you’re using, before the cooking time begins. So from start to finish, these BBQ pork chops shouldn’t take longer than 30 minutes, but please, consider that extra time when planning your meal.
You can cook frozen pork chops in the Instant Pot, but it will take longer for the cooker to reach temperature and longer for the pork chops to cook through.
I haven’t tested this Instant Pot recipe specifically with boneless pork chops. Still, you should be able to follow the recipe as written using boneless thick-cut pork chops and reducing the cooking time to 15 minutes.
For the most straightforward honey mustard dipping sauce, blend ¼ cup mayonnaise, ¼ cup Dijon mustard, and ¼ cup raw honey until smooth and creamy.
