    These overnight oats are packed with a peanut butter, chia seeds, and dark chocolate chips for an easy breakfast. It tastes just like chocolate chip cookie dough, but is filled with nutritious ingredients. It will ready in the morning, and tastes delicious!

    Both the oats and chia absorb liquid from the almond milk overnight, leaving it creamy and ready to eat.

    • Chia Seeds: Makes the overnight oats thick and creamy.
    • Almond Milk:  You can use unsweetened, unflavored non-dairy milk, but any milk will work.
    • Honey: This gives the overnight oats their sweetness. You can also use maple syrup.
    • Peanut Butter: This is my favorite creamy nut butter to use for overnight oats, but any nut butter will work in this recipe.
    • Chocolate Chips: You definitely need chocolate chips in this cookie dough recipe!

    Steps to make the overnight oats.

    Step 1: In a large bowl, mix together oats, chia seeds and almond milk.

    Step 2: Add maple syrup and peanut butter. Mix until all ingredients are well combined.

    Step 3: Next, fold in ¼ cup dark chocolate chips.

    Step 4: Pour into an airtight container and allow to set in the refrigerator overnight.

    Step 5: Serve in individual cups and top off with remaining 1 tablespoon of chocolate chips.

    • Make a double batch and keep them in the refrigerator for those days when you don't feel like making breakfast.
