Fresh is ideal for this recipe since frozen veggies release excess moisture.

    Can I roast zucchini?

Yes, place squash on a baking sheet and bake in a preheated oven at 375 °F for about 20-25 minutes, flipping halfway through.

    How do I store leftovers?

Store leftover squash in an airtight container in the refrigerator for up to 3-4 days. Reheat in the air fryer or oven.

    Ingredients

    • 2 medium sized zucchinis
    • 2 medium sized yellow squash
    • 2 tablespoons olive oil
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • ½ teaspoon paprika
    • Salt and pepper, to taste

    Instructions

    • Preheat your air fryer to 375 °F for a few minutes while you prepare the squash and zucchini.
    • Wash the zucchini and yellow squash, then trim off the ends. You can leave the skin on for added texture and nutrition or peel them if you prefer. Slice the squash into ¼-inch thick rounds.
    • In a large mixing bowl, toss the sliced squash and zucchini with olive oil, garlic powder, onion powder, paprika, salt, and pepper. Make sure all the slices are evenly coated with the seasonings.
    • Place the seasoned squash and zucchini slices in the air fryer basket. You may need to cook them in batches depending on the size of your air fryer. Avoid overcrowding to ensure even cooking.
    • Cook the vegetables in the preheated air fryer at 375 °F for 10-12 minutes, flipping them halfway through the cooking time. Keep an eye on them to prevent overcooking. They should be tender and slightly crispy on the outside.
    • Once the squash and zucchini are done, transfer them to a serving platter.

    • Mix in fresh herbs like basil, parsley, or dill after air frying for a burst of freshness. Italian seasoning is also good.
