- Boneless, skinless chicken breasts
- Bell peppers
- Purple onion
- Olive oil
- Fajita seasoning
What can I use if I don’t have fajita seasoning?
Fajita seasoning is typically made with a blend of chili powder, paprika, garlic powder, onion powder, cumin, dried oregano, salt, cayenne, and ground pepper. You can make your own blend by mixing together a teaspoon of each spice, with the ground pepper, salt and cayenne being about 1/4 teaspoon each.
How to make this recipe
1 – Preheat oven to 450 degrees.
2 – Place the sliced chicken, peppers, and onion on a sheet pan.
3 – Drizzle the olive oil over the fajitas. Mix together.
4 – Evenly distribute the seasoning over the fajitas. Mix together.
5 – Bake in the oven for about 12 minutes.
Tip – Eat it as is for a low carb meal, or in a tortilla!
My favorite toppings are shredded cheese, sour cream, cilantro, and salsa! Enjoy!
How do I store my leftover chicken fajitas?
Place the chicken fajita mix in an airtight container and store in the refrigerator for 3-4 days.
Can I freeze cooked chicken fajitas?
Yes! Place the chicken fajitas in a resealable freezer bag. Lay the bag flat in the freezer to freeze. Properly stored, the chicken fajitas will last up to 3 months.
