Rainbow skewers with cloud dip is a fun way to celebrate St. Patrick’s Day with kids. Arrange the fruit into a rainbow on skewers or on a plate for younger kids.

Celebrating St. Patrick’s Day has never been healthier than with these rainbow skewers. They are made with fresh fruit and accompanied by a delicious cloud dip.

The fresh fruit can be bought whole and chopped up at home. Or to save time you can buy fruit that has been chopped and prepared for sale in the produce section of most grocery stores.

The fruit can be interchangeable with whatever fruit you love. I use strawberries, cantaloupe, mango, pineapple, kiwi, blueberries and grapes.
The cloud dip is the perfect dip for fresh fruit and is made with cream cheese, marshmallow creme and lemon curd.

Ingredients
What you’ll need to make this recipe.
- Reduced fat cream cheese
- Marshmallow fluff
- Lemon curd
- Red grapes
- Blueberries
- Kiwis
- Mangoes
- Pineapple
- Cantaloupe
- Strawberries
- Bamboo Skewers

How to make this recipe
1 – Mix together the cream cheese, marshmallow fluff and lemon curd until thoroughly combined.

2 – Arrange the fruit on a skewer to make the colors of the rainbow. From bottom to top: 1 grape, 2 blueberries, 1 kiwi, 1 pineapple, 1 cantaloupe and 1 strawberry.

For younger kids, arrange the fruit on a platter into a rainbow.
3 – Serve with the cloud dip.

How do I store my leftover fruit and fruit dip?
Place the fresh fruit in a resealable zip top bag and store in the refrigerator for up to 5 days.
Stored in an airtight container, it will last about a week in the refrigerator.

- 3/4 cup marshmallow fluff
- 3 tbsp lemon curd
- 12 red seedless grapes
- 24 blueberries
- 2 kiwis, peeled and cut into 12 pieces
- 1/2 cup pineapple, cut into cubes
- 1/2 cup cantaloupe, cut into cubes
- 12 strawberries, tops cut off
- 12 bamboo skewers
Instructions
1. In a medium sized bowl, mix together the cream cheese, marshmallow fluff and lemon curd until thoroughly combined.
2. Arrange the fruit on a skewer to make the colors of the rainbow. From bottom to top: 1 grape, 2 blueberries, 1 kiwi, 1 pineapple, 1 cantaloupe and 1 strawberry.
3. Serve with the cloud dip.
