How To Make Healthy Honey Bran Muffins
1 - Preheat oven to 375°. Spray muffin tins with nonstick cooking spray.
2 - Combine the cereal and boiling water in a large bowl and mix well. Let stand until cool.
3 - Mix the whole wheat flour, baking soda, baking powder and salt together.
4 - Beat the brown sugar, applesauce and egg in a mixing bowl until creamy.
5 - Add the dry ingredients, cereal mixture and buttermilk and mix well.
6 - Fill muffin cups about ¾ full.
7 - Drizzle each muffin with ½ teaspoon of honey.
8 - Bake for 18-20 minutes, or until toothpick comes out clean from the center of a muffin.
