Air Fryer Chicken Taquitos

Air fryer chicken taquitos are made easy with rotisserie chicken. Air frying cuts back on grease for a healthier option.

Making homemade taquitos from scratch is easy, especially when using a store bought, already cooked rotisserie chicken.

These air fryer chicken taquitos make a great weeknight meal option. You can serve them with your favorite sides, like guacamole, salsa and sour cream.

What did dishes go with taquitos?

Whatever you would normally eat with other Mexican dishes, like tacos and enchiladas will also go great with taquitos. Some of my favorite are rice, beans, corn, and even a salad or fresh fruit.

Ingredients

What you’ll need to make this recipe.

  • Corn tortillas
  • Rotisserie chicken
  • Shredded Colby Jack cheese
  • Canned diced green chiles
  • Vegetable oil
  • Yellow onion
  • Garlic Clove
  • Salt
  • Pepper

How to make this recipe

1 – Heat olive oil in a large skillet over medium heat. Add onion to the skillet and cook until soft, about 3-5 minutes. Add garlic and cook an addition minute, stirring occasionally.

2 – Add green chiles, shredded chicken, and shredded cheese, salt and pepper. Stir until the mixture is warmed through, about 2-3 minutes. Remove from burner.

3 – Warm tortillas on a skillet or place on a plate and warm in the microwave. You will want to be sure to warm the tortillas before rolling them, so they are more pliable. Cold tortillas will tear. Warm a couple tortillas at a time, so they don’t get cold during assembly.

4 – Place approximately 3 tablespoons of the chicken mixture down the center of each tortillas and roll up. Repeat with remaining tortillas.

5 – If using an air fryer with a basket, remove basket from air fryer and lightly spray with nonstick cooking spray. Place taquitos in air fryer, making sure they are not touching.

6 – Cook at 400 degrees for 5 minutes, flip and cook for an additional 2-3 minutes, until crisp. Repeat until all taquitos are cooked.

How do I store my leftover taquitos?

Once taquitos are completely cooled down, place them in a single layer in a resealable freezer bag and place in the freezer.

To reheat, place the taquitos on a baking sheet and bake at 400 degrees for about 10 minutes, until heated through.

Ingredients

  • 2 teaspoons vegetable oil
  • 1 small yellow onion, diced
  • 1 clove garlic, minced
  • 7 ounce can diced green chiles
  • 2 pound rotisserie chicken, skin removed and meat shredded
  • 1 cup shredded Colby Jack cheese
  • 1/8 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 30 - 6" corn tortillas

Notes

Different air fryer brands may cook at different rates, so be sure to keep on eye on food.

Oh, I love taquitos! So do my kids and that's why I like to make them on the weeknights. This is a great version for weeknights too because it uses rotisserie chicken and the air fryer! I'm looking forward to making it.
