    • Easy to make. The sugar cookie base and frosting are simple to prepare, and you can use any fruit toppings you like.

    • Perfect for special occasions. The beautiful presentation of this dessert makes it a great choice for special events, such as birthdays or holidays.

    Ingredients You'll Need

Labeled ingredients for the sugar cookies.
    • Almond Flour: A popular low-carb and gluten-free alternative to traditional wheat flour. It provides a nutty flavor and helps to hold the sugar cookie base together.
    • Baking Powder: Helps to leaven and lighten the sugar cookie base, giving it a tender and fluffy texture.
    • Salt: Enhances the flavor of the sugar cookies and helps to balance the sweetness.
    • Baking Soda: Used to help the sugar cookies rise.
    • Monk Fruit Sweetener: A low-carb, keto-friendly alternative to sugar. It provides a natural sweetness without affecting blood sugar levels. Most brands are formulated to be a direct 1:1 substitute for sugar.
    • Vanilla Extract: Used to add a touch of sweetness and flavor to the sugar cookie.
    • Unsweetened Almond Milk: Used to thin the frosting.
    • Butter: Used in the frosting to add richness and flavor.
    • Swerve Confectioners: A keto-friendly sweetener that is made from natural ingredients and can be used as a 1:1 substitute for powdered sugar. It provides a sweet, powdered sugar-like texture without the added carbs or sugar.

    Step-By-Step Instructions

Steps to make the sugar cookies.
Steps to make the cookie dough.
    Steps to make the frosting.

Step 1: Preheat the oven to 325 °F.

Step 2: In a medium-sized mixing bowl, combine the almond flour, baking powder, salt, baking soda, and monk fruit sweetener.

Step 3: In a separate bowl, combine the melted butter, vanilla extract and almond milk.

Step 4: Stir the butter mixture into the dry ingredients until everything is well combined. Place the dough in the fridge for about an hour to chill.

Step 5: Once the dough is chilled, line a baking sheet with parchment paper. Roll dough into about 1” balls. The dough should make about 12 cookies. Place the balls, evenly spread out, on the cookie sheet. With the bottom of a cup or the palm of your hand, gently smash down the balls into ¼ inch thick cookies.

Step 6: Bake for 10 minutes, or until lightly golden brown. Allow the cookies to cool completely.

Step 7: While the cookies are cooling, prepare the frosting by combining all frosting ingredients in a medium-sized mixing bowl and mixing until smooth.

Step 8: Spread a generous amount of frosting onto each sugar cookie. Top with fresh fruit.

    Expert Tips

    • Use room temperature ingredients. To be sure that the frosting mixes together smoothly, make sure that the butter is at room temperature before starting.
    • Bake until lightly golden brown. Overbaking the sugar cookies can make them dry and crunchy, so be sure to remove them from the oven when they are lightly golden brown.
    • Let the cookies cool completely. Allowing the sugar cookies to cool completely before frosting and topping with fruit will ensure that the frosting doesn't melt and run off the cookies.
    • Get creative with your fruit toppings. You can use any fresh fruit that you like for the toppings. Consider using seasonal fruits for a pop of color, or mix and match different fruits to create a unique flavor combination.

    Variations

    • Different Flours: You can try making the sugar cookie base with a different low-carb flour, such as coconut flour or hazelnut flour, for a different flavor and texture.
    • Different Sweeteners: If you don't have Monk Fruit Sweetener, you can use a different low-carb sweetener, such as erythritol, xylitol, or stevia.
    • Add Nuts or Seeds: For added crunch, you can sprinkle chopped nuts or seeds on top of the frosting before adding the fruit. Consider using almond slices, pecans, walnuts, or sunflower seeds.

    Storing & Freezing

Storing: Store the finished fruit pizza sugar cookies in an airtight container in the refrigerator for up to 5 days.

Freezing: You can freeze the sugar cookie base before baking or after baking and frosting. To freeze the dough, form it into a disk, wrap it in plastic wrap, and place it in a freezer-safe bag. To freeze the finished fruit pizza sugar cookies, place them in a single layer on a parchment-lined baking sheet and freeze until firm. Once frozen, transfer the sugar cookies to a freezer-safe bag or container.

    Recipe FAQ's

Sunflower seed butter is typically a good substitute. Tahini is also an option, but it's more liquid and has a pretty strong flavor. I haven't tried either one in this recipe though, so play around and see what you come up with!
