This 100-calorie cauliflower cilantro lime rice is a great alternative to using white rice, which is higher in calories. Flavorful and delicious.

 

Who else is obsessed with the cilantro lime rice from Chipotle? I love it! This cilantro lime cauliflower rice is a great alternative if you’re looking for a low-carb version. Cauliflower can replace grains and legumes in many recipes, which is a great way to eat more veggies. Plus, 1 cup of fresh cauliflower rice has only 25 calories in it, so not many calories.

 

Cauliflower has gained so much popularity lately, and it’s so accessible in store now in many forms. Aside from buying cauliflower and grating it at home yourself, you can buy it frozen or pre-packaged too. I personally buy it frozen because it’s a time saver for me. If you do buy it frozen it will take a little longer to cook, but it will taste delicious either way.

 

What is cauliflower?

Cauliflower is a cruciferous vegetable that looks like a white version of its cousin, broccoli. The word “cauliflower” stems from Latin, meaning “flowers of cabbage.” The head is made up of bumpy florets attached to the main stem.

 

Is cauliflower healthy?

Cauliflower is very low in calories and is an excellent source of vitamins and minerals. It’s an excellent source of vitamin C, vitamin K, folate, and vitamin B and is high in fiber.

 

 

 

To start, Heat skillet to medium high heat, add butter and garlic. Then, sauté for about a minute. Olive oil also works here in place of butter. Reduce temperature to low heat. Add the riced cauliflower and cook on low heat until the consistency of the cauliflower is soft. This will taken longer if you’re using frozen cauliflower. Once the cauliflower is soft, remove the skillet from heat. Add lime juice, chopped cilantro, and salt. Mix well and enjoy!

 

One tip is to make sure to cook the cauliflower until it is soft so it has the texture of white rice. If it doesn’t cook enough it will still be crunchy. If you like a little crunch that will work fine, just be aware if you are trying to get a consistency of cooked white rice.

 

How do I store cooked cauliflower rice?

Place cauliflower rice in an air tight container. Properly stored, cooked cauliflower will last for 3 to 5 days in the refrigerator.

 

Can I freeze cauliflower rice?

Yes. Place cauliflower in a covered air tight containers or heavy-duty freezer bag. Properly stored, it can last for 10 to 12 months.

Ingredients

  • 16 oz riced cauliflower pre-packaged frozen or use a cheese grater on fresh cauliflower
  • 1 tbsp butter Olive oil is an alternative
  • 1 clove garlic, minced
  • 1 lime, juiced
  • 2 tbsp fresh cilantro, chopped
  • 1 tsp salt
