    Classic deep fried shrimp toast get a makeover with this lighter and lower calorie Air Fryer Shrimp Toast recipe! If you've never tried shrimp toast, this is such a delicious and fun appetizer to make. It's simple, but so good. The bread gets crisp and toasty while the flavorful shrimp cooks to perfection in 5 minutes. Serve with my spicy low-fat mayo dip.

    Ingredients

    For the shrimp:

    • 12 ounces uncooked shrimp, peeled, deveined, and tails removed, thawed if frozen
    • 1-2 cloves garlic, minced, pressed, or finely grated (1 large or 2 small cloves)
    • 2 scallions, finely diced
    • 1 inch piece ginger, peeled and grated (I use a zester to grate both the ginger and the garlic)
    • 1 teaspoon sugar
    • ½ teaspoon paprika
    • ¼ - ½ teaspoon salt
    • ½ teaspoon pepper
    • 1 egg white
    • 2 tablespoons cornstarch
    • 4 slices white bread (thick), crusts cut off (I like potato bread here, but a low-carb or light bread can be used)
    • sesame seeds for optional garnish
    • Olive oil spray

    For the dip:

    • ¼ cup light mayo
    • 1 teaspoon sugar
    • 1-2 teaspoons fresh lime or lemon juice
    • ¼ - ½ teaspoon salt, to taste
    • 1 teaspoon chili crisp oil or sambal or sriracha (optional, but I like the spice)

    Equipment

    • Air fryer
    • Zester
    • Olive oil sprayer (I love this refillable one!)
    • Meat thermometer
    • Food processor (optional)

    Instructions

    Finely dice the shrimp or process it in a food processor until minced. Do not turn them into a paste.

    In a bowl, combine the diced shrimp with the next 8 ingredients (grated garlic and ginger, diced scallion (save a few for garnish), paprika, salt, pepper, egg white, cornstarch). Mix well. The mixture should look almost like a paste.

    Cut off the crusts off the bread and slice the bread on the diagonal to make triangles. Spread the shrimp mixture onto the bread, pressing gently to get the shrimp to stick to the bread a little. Try to coat the whole piece, especially the corners.

    Place the shrimp toast onto the air fryer basket or tray. Spray the tops of the toasts with olive oil.

    Air fry at 375F for 4-6 minutes, or until the shrimp is pink and cooked through (internal temperature of 145F at the thickest part of the toast). Sprinkle with toasted sesame seeds and diced scallions, and serve with dip.

    Make the dip: Combine all the ingredient together in a small bowl and mix well. Adjust the flavor with more salt, lime juice, or chili oil.

    Kate's cooking tips

    • Skip the sugar if you like, but it adds a negligible amount of calories and gives the shrimp a nice subtle sweetness.
    • Keep the crusts on the bread if you like.
    • This recipe can be made with ground chicken or ground turkey too. Just check the internal temperature of the thickest part of the toast, it should be 165F.
