- Potatoes - Salt - Ground pepper - Breadcrumbs - Eggs - Onion - Red bell pepper - Green bell pepper - Zucchini - Parmesan cheese - Olive oil

How To Make Air Fryer Potato Pancakes

Step 1: Peel and chop potatoes and boil until soft, about 20 minutes.

Step 2: Drain water from potatoes and place in bowl. Mash with a potato masher. Set aside to cool.

Step 3: While potatoes cool, dice onion, red pepper, green pepper and zucchini.

Step 4: In a medium sized skillet, heat olive oil over medium heat. Add vegetables and sauté until vegetables or tender, about 5 minutes. Remove from heat.

Step 5: Add parmesan cheese, salt and pepper to the sautéed vegetables and stir together.
